I would have to say that Sephiroth could be one of epicness when it comes to being a boss. 
Dracula from the Castlevania series might be one to consider as well.
Any one of the Greek gods from God of War 3 is most definitely epic (except Hermes imo).
Mike Tyson from Punch Out, who can forget him.
Psycho Mantis from Metal Gear Solid is just one memorable boss...not necesarily epic like the Greek gods ^^, but most certainly difficult.

I was a kid when I fought Gannon from Zelda.  It was my first real 'boss fight' since I didn't count Mario brothers levels as boss fights.  It was exciting and scary and free flowing and I had never seen anything like it before.

It was insane.  I died a few times before I defeated him.  It was the best boss fight ever for a kid who grew up with Atari and NES and didn't have any of the games you youngsters have nowadays.

The most intense boss I faced was Ganondorf in Ocarina of Time every time I face him I get really excited he is the final boss in the game after all and I get a hint of revenge for everything he done bad in the game.
