My favorite NPC Dialogue comes from The Elder Scrolls IV: Skyrim.

Just after joining up with the Assassins Guild you get to ask the other members about themselves. In a typical speed dating style answer one of the female members states "Well, I enjoy long moonlit walks on the beach, knitting, and unicorns. In fact, once while on a night time stroll along the shore I saw a unicorn, and promptly killed it with my crochet needle." Typical Assassins

I don't rally know why it's my favorite NPC quote but I do remember laughing for hours on end after hearing that one. Perhaps if everyone was so bluntly obvious in the "So...I don't know anything about you" stage of a relationship (Well rather the "I've read everything on your profile, hunted down your Facebook, Twitter, Instagram, and Vine accounts... but I don't want to sound like a creep. So...I'm going to ask you to tell me about yourself" phase of a relationship.)

Not technically an NPC, as you do control him for mini levels things in the game, but its still one of my favorites ever. You also have to select the right dialogue option or you won't ever see it, and you only get one chance at it too, making it even more special.
