I eat potato skins because they're good for you. However, I don't exactly like them, especially alone. I just don't like the texture it adds to the potato(unless it's fried. Then I don't care.).

I like potato skins, they have a taste close to neutral but somewhat on the positive scale of flavors (meaning it tastes a little good) plus I've heard that it's really good for you so I don't see a reason why one shouldn't eat them if you don't dislike them.

You mean those things they serve at TGI Fridays, they are pretty good appetizers but I prefer pot stickers over them IMO. But if you're actually referring too potato skins, of course they have nice flavor on fries or baked potatoes.
