My favorite eeveelution would have to be Umbreon, Umbreon is a very nice wall, in Gen two give Umbreon Mean look, Toxic, Confuse Ray, and a decent offense attack or moonlight, and you can be whittle away your opponents health and your opponent just has to sit there and await their demise.

I can't say for certain. But there's 3 Eeveelution that I like most
Vaporeon: An special-emphasizing tank. High HP and high Sp.Atk. It also can learn Aurora Beam by level up,thus countering Grass type which is also an 'Special sweeper'. makes up perfect cohorts for 'Free spirited and unrestrained' style
Jolteon : An assasin. He has the most base Spd. on Eeveelution,135. And I mean 135 base Spd but has only 65 base HP. Also Electric type are only weak to Ground types. Prepare for strong Special moves and watch your team win. Great for 'High risk,high return' style
Espeon: An special sweeper. Traditional Psychic type. Mid range Sp.Def,above-average Spd. and high Sp.Atk. Although it's Def. is a bit below average for Eeveelution and may fail to Dark type in one turn due to it's tendancy to have above-average Atk.(Don't count Umbreon. In my opinion I think  Espeon  is the best evolution of Eevee because its one of the best physic type Pokémon in the whole Pokémon franchise and it looks very appealing and cool, and also I think it has better stats then the rest of the Eeveelutions.

Personally I'd like to say I like the original Eevee before it has evolved into anything else, I think mostly because that cuts out a LOT of the weaknesses issue. Regular Eevee is only a NORMAL type, so that helps remove any of those pesky weaknesses (except maybe Psychic and Fighting).

The best eeveelution by far is Umbreon! Umbreon having the highest special defence and defence. Only is weak to bug and fighting. Bug types aren't stung enough to bypass umbreons defence and can learn moves like psychic and has higher speed than most fighting types to get the first move in and has the special attack to back up its psychic.

My favorite is Espeon, also being my favorite type of pokemon (psychic).  Its only weakness is not having a high defense but its special attack...once you learn psybeam/psychic...'nuff said!

I would have to say either umbreon or leafeon is my favorite evolution from eevee because Umbreon has high special defense like darkblood said and at max at level 100 it can reach 394 as well as its Hp which are very respectable. I like Umbreon because it has great stats and it can learn the move moonlight which can be useful in restoring hp. Leafeon is another good one because it is a defensive Pokémon at 394 max for level 100 and it can learn moves like giga drain which is very useful, and one of my favorite grass type moves, leaf blade it is so strong and it can do 90 damage and it is compatible with a lot of tms as well. These are my favorite eevolutions haha.

Uh, I really Like Sylveon. But there's not much to say about it...

I've always been prone to Umbreon, especially
if it was shiny. Then again, I like dark pokemon
most, next to dragon. My second favorite would
