But as soon as his nose grows, he has told the truth, so his nose would immediately shrink back. I think I would get to know the person more, to get a better track record of his lying, and get an opinion of his general honesty before making any assessment of his character.

I forgot to answer the question. I would not believe a a person who admits that they are a liar. It doesn't really create a logic paradox unless you believe that a liar NEVER tells the truth. I know what the philosophical point of that little question is, but I prefer to take it in the realistic sense. Not every single thing that even a pathological liar says can be false .They have to say things that are true at some point. So if they admitted that they are a liar, I would just take that as the occasional truthful thing that they said. I will believe that they are a liar, so I will decide to not believe in the other things that they say.

It depends on how good the person is at lying.   If he is good at it then you might accidentally trust him/her.  If you can tell if they are lying then it's easy to not trust them.  I know it's hard it even hurts my head to straighten it all out.
