You said "what if you can't sell any of that unlimited supply for money?" as a question in the opening post, but never explicitly said you couldn't, the way you said "your answer can be anything but money." I thought I found a loophole, but alas, my genius plan was foiled.

I'd say time then, like you said. If I need more money, I have more time to work. If I need a break, I have more time to relax. If I need to get something done, I have more time to do it. I do think that could be dangerous, though. If you have unlimited time to do an assignment, would you ever do it? I probably wouldn't. I would probably become the least productive person on the planet.

Unlimited energy. I wouldn't have to sleep anymore, which if you think about it gives you a ton of extra time. If you live to 90 you'll have spent roughly 25-30 years of that time asleep.

I think if I was to have an unlimited supply of any one thing, it would be sustinence, like food and water. I would only want that because I would be able to just basically do anything, like explore the world and adventure, not needing anything but a backpack and a car just to go around in. I think it would be a really fun adventure if I had that as an unlimited supply.

If we're talking purely selfish things. I'd say an unlimited supply of new technology. I suppose that would stick me with weapons of mass destruction though. The government would take issue, hopefully we'd be able to work out an arms trade where I'm not locked up or assassinated.
