Mario 3 certainly had the best soundtrack. On the NES, my favourite track is the Grassland Overworld theme. In the All-Star version, the underwater, Giant World and Airship themes were excellent.

My favorite piece of Mario music is Ultimate Koopa from Super Mario 64.  Tons of nostalgia from that piece, plus I love the use of the pipe organ (one of my favorite instruments).
