I can't really decide which one is my favorite, so these are just a few of the ones I absolutely love.
Team Fortress 2-I've been disappointed by the last few updates, and got a little bored of it after 950 hours, but I still play it with friends.

Civilization 4-5 (with expansions).
I love Civ4 and Civ5 a lot, I can spend hours just playing them, I spent 5 straight hours playing 5 a few days ago..

Epic Battle Fantasy 4.
Just a really fun, humorous and decently long JRPG, I really recommend.

In case i haven't drilled it into your head enough, my favourite Steam game (favourite in general, in fact) is Europa Universalis IV. 

The gameplay is addicting, there's loads to do, and i can never get bored of it.

I don't have it but I use to have the CD. But mine is spore, I don't know why but I've always loved that game.
