Jak & Daxter would probably make a pretty good anime. I would also not short-change The Last of Us, or Uncharted. I feel as if they would all make for excellent anime.

I do not know why this came from my sick and twisted mind, but what about Final Destination as an anime? That would be so interesting. They could make so many arcs with that series. Come to think of it, I am surprised that they haven't already made it into an anime.

My feelings are, that it would have to be a show were death can occur. Deaths in anime are always dramatic (see Naruto, Dragon ball z, etc...)

The Legend of Zelda would make a great anime if done right. Majora's Mask would probably be the best adaptation to glean from.

Also, Earthbound has the potential to be pretty wild. What with all the fighting hippies with weapons like stop signs and all that.

But #1 on my list would have to be Fire Emblem. That series is BUILT for anime.
