Why? Why must it only be one? 
Oh well, I suppose my all time favourite is still The Sun Rises from Okami. It sounds so hopeful and heroic, as well as the title itself is incredibly symbolic.
However, there have been some serious contenders lately, like Sectonia Battle or C-R-O-W-N-E-D, both of which are amazing for the same reasons.
Why? Why must it only be one?

I don't know about you all, but there is this final boss with a music theme that both perfectly matched what you would call dispair and hope at the same time, and I heard of this music since I was 9 years-old and I still never forget it.
But one down side is that you have to fight the boss and listen to the music at the same time so you would get the true feeling, really I'm not joking, anyway here's the link:

I loved the final boss battle music in Portal 2. It was really fitting for the last level and overall belonged really well with the rest of the soundtrack.
