Eevee has 7 current evolutions. (8 in October)

Flareon, Jolteon, and Vaporeon are obtained by using the appropriate stones.
Espeon and Umbreon are obtained by levelling at either day or night.
Glaceon and Leafeon can only be obtained in Diamond, Pearl and Platinum by levelling at the appropriate places.
Sylveon can only be obtained in X and Y.

Try looking in the department stores that are in each Pokemon games those usually contain the stones for the first three which are.
Jolteon:thunder stone
Flareon:fire stone
Vaporeon:water stone
To get espeon level a eevee up during the day to get umbreon level eevee up during the night.
The mossy rock is located west of the forest in Sinnoh level up eevee near that mossy rock to get leafeon.
The glacier is on a snowy route level up eevee on this route to get a glaceon.

Well,  there are stones that correspond with each eevolution 

Most department store will have what you are looking for, jolteon, flareon, and vaporeon use stones to evolve and Espeon and Umbreon are only obtained through training them on clock based events, either at the day time to get Espeon and night time to get Umbreon. Leafeon and Glaceon have specific locations you have to go to get them. I hope that this helps you in trying to get whichever evolution of eevee you want. I can't wait for X and Y this october, and the 8th evolution of eevee,Sylveon. If you need any further help, let me know
