It depends on the intensity of the shock.

Minor shocks I'd gasp with literally shock that it happened....intense shock (which I've never experienced) I'd probably scream hysterically.

Well it really does matter. If it is someone telling me something really deep that is shocking I usually just say "Wow" in a slow monotone voice. Though if it is me getting scared I usually just flinch.
