I would have to agree with you, he was incredibly difficult in KH, but I'll throw out another one so I'm not just copying. Shao Kahn in Mortal Kombat 9 is incredibly hard as well. The easiest boss would have to be Dracula in Symphony of the Night, because if you have the shield rod and Alucard's shield, he'll die in 4 seconds more or less.

Like sephitard, I don't want to copy, but I will say that Sephiroth from KH1 is the hardest boss EVER. He was dumbed down in KH2. But just to provide a new idea, I would say that Alma in her first form on the xbox Ninja Gaiden on Master Ninja mode is also a pain in the neck.
For the easiest boss of all time, is the Leader (final boss) of The Incredible Hulk for the SNES. My reason being no matter if you are on easy, medium, or hard, it is the same thing. he does not attack you. He stands at a ledge with a full health bar. All you have to do is walk up to him (which again, he won't attack you, so you could just stand there an inch away from him for however long you want), and you do one uppercut on him. He flies off the edge and that is it. Check it out on youtube by typing SNES the incredible hulk endings. Pretty pathetic and disappointing.
