Toad's Turnpike from Mario Kart 64 is pretty fun, especially on Mirror Mode

But my absolute favorite would have to be DK Mountain from Double Dash. That barrel cannon at the start, the bumpy ride down the mountain, the twists and turns that could send you in a pit, and those boulders = absolute fun.
