Only a few times when playing my old gold game. I usually over level one, and leave everybody else low, so if my main Pokemon faints, I'm stuck with really low leveled Pokemon, but I usually win regardless of if I'm high leveled or not.

Yes, I always go to the first gym under leveled cause I choose butt kicking pokemon for the job, those pokemon never surpass lvl 10 except my starter who I raise to a lvl 13.

OK yeah, you get the picture. I don't think I've ever gone into a gym past the 2nd or 3rd in a region not under-leveled.

After I beat the game, I usually have access to my favourite Pokes which I will then get and breed till I get the right one. Then I'll train them and yeah, works fine.

I used to in my pokemon ruby when I was seven, but I don't anymore. I play smart and battle every single trainer I come across, and I usually have 3-4 pokemon overleveled for the gymbattles and I annihilate my opponent.

You should also bring one of your HM slaves. They can be handy as a diversion when you need to heal a good Pokémon. The best part is you don't need to worry about their happiness level.
