I would say Symphony of the Night before The Dracula X Chronicles came out on PSP, provided that you play it on TV with the component hookup for PSP.
The game not only features a 2.5D remake of Rondo of Blood, as well as the original version after it's unlocked, but an unlockable Japan exclusive (Sega Saturn) version of Symphony of the Night in which the character Maria as well as Richter are playable from the start of the game, whereas the English versions only had Richter as unlockable.
The Saturn version also has an expanded weapons and items list and 4 map areas (with the reversed castle counted) that are unavailable on the English versions.

I say Super Castlevania IV. Okay, you won't be able to play as Alucard, son of Dracula, but at least here, you can whip in 8 directions, instead of straight forward only.

I loved the GBA and DS Castlevania's, particularly the Aria series. I never really replay the games as different characters, but the aria game on DS was actually so cool because you had three characters to play as that you could change to on the fly. It's the first castlevania game that I played that I liked, and it's what got me hooked on the series.

I love the original, though, I am still stuck at Death's stage. I would probably say that Circle of the Moon or one of the Sorrows is my favourite though (those were the ones that made me really love the series).
