I am going to say Psycho Sid Love the entrance music and the chewing the bubble gum. I would also consider Big Van Vader it's time! it's time! its Vader time!   Big Daddy Cool and Razor Ramon loves those wrestlers they made it seem cool.

I would bring back Macho Man he could wrestle and cut a promo growing up in the 80's and 90's he was fun to watch. I would also bring back Yokuzana he was agile for a very big man he weighed close to 600 pounds but could move like a 250 pounder. My third choice would be Razor Ramon. He was one of my favorites the way he could cut a promo and his razor's edge was awesome to watch. 

Stable wise I would bring back the New World Order, with Syxx, Nash, Hall, being the center those guys were awesome in the 1990's in their ring work.

      Honestly if I had to choose, it would probably be Brian Pillman.  He had so much untapped potential as a main event star before his tragic death in '97.  Just thinking of the great matches he could have had with Shawn Michaels, Steve Austin, HHH and others, plus he was always one of my favorites when I was growing up.

I'd bring back Eddie Guerrero.  He was such an amazing wrestler that even if he was a good guy or bad guy, you couldn't help but like him.  Plus there was a rumored match between him and Shawn Michaels so I would make that happen, too.
