For me it is the Chemical Plant Zone in Sonic 2 on Genesis,not only does this level have awesome music but the design of it is real nice,like something from a sci fi movie

The Sky Sanctuary Zone in Sonic & Knuckles is also very good

For me would be metropolis zone from sonic 2 I simply love the soundtrack. Although the level itself can annoy the heck out of you. You still have fun in a way trying to complete the place.

In Sonic Adventure 2 Battle at the very end of the game.

When the giant thing in space is about to crash down into the earth (or something like that, it's been so long I don't remember every detail) and Sonic and Shadow both go Super teaming up to stop it. Flying through space and taking the boss down is by far my favorite experience in any Sonic game in terms of game play.
