I start to charge my phone once it drops down to one bar of battery life. I wouldn't want it to die in the middle of something important like a text or phone call. I usually charge it every night just to be on the safe side. I never just let it die before getting concerned enough to start charging it. I charge it every night so it is ready for the next day and it won't die so early. I leave my phone off when I am not using it to save battery. So I try to make it last as long as possible so it doesn't die when I need it.

My phone has an insane battery life, then again, it isn't that great of a phone... It makes an annoying, ear piercing screech of a noise when it's low on battery. Unless you turn it off or charge it up, it won't stop. I thought it was broken the first time it happened. So I would say I charge it before it dies.

I've always heard it helps your battery life if you wait to start charging once it gets to 20% or lower, then charge it all the way.  So by the end of my day before I go to bed, it's usually around 20% so I just charge it and pick it up the next morning.  I have an iPhone 4 and the battery life on it is pretty decent, never had much trouble.
