Here you can say what mob you think is the hardest to fight. I would have too say either the Ghast or the Enderman because they both deal a lot of damage and can take a lot as well.

Anyways, I think the skeleton is the hardest non-boss mob.  It gets you from far and it fires pretty fast, so you'll get a lot of arrows in you in a short amount of time.

It's totally skeletons for me, the rate at which they fire their arrows is enough to really get you killed if your not careful. Especially when there are more than three at once trying to hit you.

For a non-boss mob I have to agree with MoblinGardens & gamemasterx64. Although you can exploit the skeletons not so intelligent AI by getting another skeleton to shoot it, hard but possible.

Skeletons are very hard to defeat to me for some reason I guess it is because I lack the skill to do so they are strong as one but when in groups that's when I'm in trouble.

For me the hardest mob in Minecraft to deal with is the Ghast because they blow exploding fireballs at you, even though you can send the fireballs flying back at the Ghast with a sword, they are annoying because when you damage them they scream like a baby and, luckily are only located in the Nether.
