I really don't remember some of them looking like that. Either way, I'm sure making graphics for the original GB was a bit harder and more limited than with the GBC/GBA/DS. Or it could be that they just had a better artist do the rest of the games (due to budget being bigger probably). Some also look weird due to having to be squeezed into an "invisible" box since they could only be so big.
