Yuri - Girl on girl. As it too sounds ...
Anime - Japanese animation. And it's style.
Manga - Japanese comics, a lot of animes are based off of these "manga's".
Hentai - Japanese animated porn, basically. Usually consists of pretty graphic, and sometimes gory content. Many say it translates to "pervert"
Ecchi - Usually means "erotic". So, basically represents nudy arts and works based off of anime,but usually doesn't have anything invovled with sex.
Doujin - I'm really clueless on this one ... I think maybe hentai comic, but I'm not sure.

It's not too in depth, but hopefully that gives you the basic idea ... this was off the top of my head.
