I guess I'll go down and answer all of your questions one by one.
Yes, in fact, I do remember when Pokemon first came out. The first episode I still believe is one of the greatest because it had some of the most emotional feeling put into the series, whereas everything now seems too light and silly. In that first episode, it was pretty funny watching Pikachu poke fun at Ash and seeing how a newbie trainer acts in the big bad Pokemon world.
The Pokemon games are meant to have many similarities, though the similarities between the current generation and the first generation are few. The same basic strategy is the same: 6 Pokemon and 4 moves with types-beating-types kind of gameplay. In this respect, the first few games were pretty deep games, and that depth continues even in today's games.
Relating to Ash's age, the first episode of Pokemon Black and White said that Ash was only ten-years-old. So I think it's safe to say that Ash will never age through the course of the anime. The only sign of change is the clothes that he changes each season. And even then, they still look mostly the same (I miss the old hat though).
Brock and Misty were scrapped because I'm guessing they were getting old. There are only so many jokes that you can make with Misty's stubborn personality and Brock's crazy one. They probably ended up returning to their gyms and battling trainers like they should've been doing all this time.
Brock doesn't really have "blind" eyes, but that's just the style he was drawn with. His eyes are perfectly normal like everyone else's; I guess that's just how the original creators wanted to depict him. Maybe they wanted to make him seem Asian and we all know how smart they are...
Ash getting married in the anime will probably never happen. It's just something that will remain in fanfiction. If you look around the web enough, you'll probably find a few reasonable explanations. Remember, Ash was, is, and always will be 10 years old so there really isn't any reason for him to settle down with a wife, kids, etc. He's just happy to be traveling around the world with his Pokemon.
Oh man... favorite Pokemon. I don't think I could answer with just one. A few that I've liked, though, include Glaceon, Flygon, and Pachirisu. :3
