I'd have to say Super Mario Galaxy 2, that or Super Smash Brothers Brawl. They both are great games that I've played a lot and they have a lot of things to do in them that actually present a challenge.

If you like first person shooters, you should also check Metroid Prime 3: Corruption. Metroid Prime Trilogy might work for you, but Prime 1 had too much running back and forth for my taste and Prime 2 was unbelievably confusing. Still,I finished all 3.

I haven't played many of the better ones, but the good ones I've played are No More Heroes, Twilight Princess and SSB Brawl.

And, I don't care how many people disliked it, Final Fantasy, Crystal Bearers was very, very fun game Too easy and short, but fun.
