Zamiel : Good choice on the Elfen Lied. That's my first and one of my favorite anime shows.

I've watched Chobits, Rosario + Vampire, and Elfen Lied. I've seen a bit of Lucky Star and Evangelion. I really recommend Evangelion and Elfen Lied if you want something on the more serious side. The other ones are all just pointless and adorable.

A good one that I just recently watched is High School of the Dead. The story line is great, as is the animation and the music (I think they stole some from 28 Days Later). There's too much fan service in my opinion but once you get past that it's a great short series.
