I have been playing a marvel vs dc one I threw together, and one with some old cartoon charters. I had one full of anime charters but I haven't touched it in awhile...

Yes! M.U.G.E.N is awesome! I used to spend soooooo much time on it, adding characters and levels. What a process that was lol. I have a friend who was intensely into it too, which is probably why I was willing to put so much effort into getting it to work. Eventually we learned about pre-made packs, but I believe it was shortly after that we started losing interest. What we did most often is we would take Evil Ryu and Holy Ken and team up against the mostly terrifying ai's in 2v2s. 
As far as pure unbalanced fun in fighting games, the 2v2 system is mugen rivals commercial games in my opinion.
