So,

Tekken 7 has already been out in the east for some time now, with the version in the west coming in around 2017. So my question is that what will happen after the release of the long-awaited game?

The series started out in 1994 on arcade and on 1995 with
Tekken 1. It was a simple fighting game that changed history of future fighting games to come. The game as many of you may know, has had numerous squeals, spin-offs and two (with okay quality) movies that were released on Tekken.

So will the wait for Tekken 7 be worth the wait  after all? Will many more projects come from it like Soulcalibur 6?

Tekken will continue, for sure. I honestly doubt Namco will put an end to the revolution of fighting games.

The wait for 7 looks worth of it after nearly 8 years after 6 was released. It also looks like the storyline will make a huge leap forward, and even more in Fated Retribution. I'm totally looking forward to it, I'm sure that Tekken won't disappoint us.

The question is: what will happen next? Technically, the Mishima storyline ends with 7, so any future game will come with a brand new storyline starting from scratch. It has happened in other game series, like the same Soulcalibur you mention (if V wasn't such an incomplete game it could have been fairly good) and also King of Fighters, and the results are quite good storyline-wise so let's keep the positive vibes and hope for the best, even if we go seven more years without a main Tekken game.
