The 1st game in the series that I played was Castlevania for NES. That was like 20 something years ago though, so I dunno; that game's difficulty might discourage you form the rest of the games.

If you want the official cannon or storyline, that game isn't the 1st.

If you want classic style I'd personally start with Castlevania III since I found it more interesting than the first one. If want the exploration style, then you can't wrong with symphony of the night.

Quite frankly, you can't go wrong starting with any game, the story doesn't play that big of a deal as far as gameplay is concerned.
Personally, I would recommend Super Caslevania IV for the SNES.
