I'm brainfarting on this but will PS games with multiple discs like FF7 be able to be played all the way through since I only see one page for its entry. I'm sorry for asking this but I really can't remember.... I'm getting old....

Absolutely. 
For multi-disc games,  the emulator window has an "eject" button that is used to eject a disc and pressing it a second time loads the next disc.
