There are a few that I find interesting, and I can't really pick just one. 

There are the Japanese people, back during the feudal times. They were so rich in culture, and their customs are so intriguing, that I just can not learn enough. It's one of the reasons that I want to go visit Japan for a month for a vacation one day. Besides wanting to see all the anime stuff, ordering a few custom things, and trying lots of food and sight seeing, I want to find somebody who is willing to tell me old legends, and teach me some of their customs. 

Then the Romans. They are so interesting. They were always trying to make their empire bigger. They had Gladiators. I don't really know how to explain why I find them so intriguing, but they just are. 

And the Greeks. Now, I am not religious at all, but the Olympians Gods make a lot more sense to me than a lot of the stuff I hear about today, and I can never learn enough about the Greeks or their stories. I would love to visit Greece for a few weeks, and just hire somebody to show me around the country, and tell me a bunch of old legends and stories so that I can learn more. 

It's so hard to choose just one, but it would have to be one of those 3.

Considering the fact india was never a nation until after 1947, that's not really a valid choice. Before then it was always in fragments, the larger ones being ruled by 'foreigners'.
It would be tempting to choose Rome, but given how much I know about them the fascination isnt so great any more.

It was a middle age kingdom so it depends what you classidy as ancient.
It controlled much of south east asia, and the mystery of its demise, and its rediscovered (abandoned) capital city is intriguing.

I am a Christian. So I find the ancient Israeli civilization to be interesting for several reasons. One it shows how important and obedience is to God. To me it also shows what happens when a civilization becomes immoral. When Israel turned their back on God they suffered years in misery.  But there civilization shows there is hope is Jesus came out of the civilization to be the savior. That is why I find the Ancient Israel civilization interesting. Blessings in Christ everybody
