So I got a notice saying to call the number on the notice beginning after 5 PM on 6/6.

I've been doing that and they have been telling me to call back everyday after 5 PM.

Finally today, I listened to instructions and they said that I'm off the hook for jury telephone standby service....

Does that honestly mean I am good to go now?

I never call when I get it. There is a thing on it that tells you to list the reasons why you can't do it and mail it back so I just do that. If you still have time I would recommend doing that but if the thing says that you don't have to do it then I would have to assume that you are off the hook.
