I'd love to speak French and Dutch; I'd be able to the French parts of Canada, and France of course, and be fluent in what I'm ordering at restaurants. Dutch would be useful, as I've got quiet a few Dutch friends, and if I was to get lost whilst in the Netherlands I can easily ask for directions

If I could, I'd learn 2 or 3 languages.  Unfortunately, I don't think I'm smart enough for that.  I'd definitely like to learn Spanish, but that's because I know the foundations already and because it's probably the most useful to learn here in the US.  However, if I could learn ANY language?  I'm not entirely sure what I'd choose.  German would be fun, I think, because my husband lived there for a lot of his life.  French sounds fun to speak.  And Latin would be extremely helpful in learning many other languages as well.  I guess I'd be most likely to choose Latin since it'd allow you to be familiar with so many other languages.

juuldude :  I don't remember the exact numbers, but I'm pretty sure I remember that a huge percentage of languages actually have a base or roots in Latin.  One of my middle school teachers gave us Latin words every week to learn, and I always loved it. I'm growing interests of learning Spanish. It is a well known language in the world, making it useful, as well as a beautiful language. With both English and Spanish, my Dutch for a lot of African countries, and my poor French, I should be able to socialize with a lot of people, globally.

Another cool thing would be Japanese, mainly for anime purposes. That hasn't gotten my first priority though, perhaps later.
