I'd say almost anything by Yasunori Mitsuda. A few examples would be:

- "Time's Scar" from Chrono Cross, aka the opening theme. Holy crap that is some epic music. I'd almost describe it as a traditional style from a different world.

- "Last Battle" from Xenosaga Episode I. A very complex piece that adds layer upon layer on top of a great piano bit.

- "Battle with the Devil" from Tsuganai. A creative twist on the idea of a final boss track: it's not completely dark! The mix of Celtic instruments with classic orchestral tracks make it a strange yet awesome experience.

Pokemon Puzzle Challenge for the GBC had some epic panic music, especially against the champion. And MD explorer of time's "Dialga's fight to the finish" and "Palkia's Onslaught". Yeah, so my votes are Pokemon, Banjo-Kazooie, and Halo.
