I have caught 2 shiny Pokemon in my Pokemon career.  I caught a shiny Zubat in Pokemon FireRed and a shiny Lotad in I think Ruby, not sure.  Those were like 5 or 7 years ago so hopefully I can get another shiny in the near future, hopefully also a better Pokemon at that.

I'm almost tempted to start playing Black 2 again to MM for shinies. Several of my favorite Pokémon have cool shiny sprites. I was MMing for a shiny Solosis a few months ago, but lost interest and stopped playing.

I have got so many legit shinies as I hunt them and I probably forgot some. Some are random though. I HAD a shiny Geodude, Feraligatr, 2 Magnezones, Slowbro, Linoone, Staraptor, Charizard, Stoutland, Sawsbuck, Raichu, Pidgeot, Blissey and Fearow. Now since I had lost data for those I HAVE a shiny Bouffalant, Braviary, Starmie, Chandelure, Liepard, Tangrowth, Espeon, Hydreigon, Litwick, Dugtrio and Ninetails. So I remember 25 shinies. I need a life...

I have caught quite a few but on different games. On the non-hacked versions I have caught a total of 5 them being a Spearow, Larvitar, Pichu(from egg), Magby(from egg), and Cyndaquil. I got the Cyndaquil from Professor Elm at the beginning of the game on Crystal. I nearly busted out laughing from how lucky that pick was. Now as for the hacked games I think I got a total of 100+ shinny pokemon and this was on Liquid Crystal the only hacked game I play. Most of the shinny pokemon I got are some of the basic pokemon that you run into almost anywhere so nothing really special about them being shinny, but I did get some cool ones like all the legendary dogs, all the starters, lugia, seviper(awesome looking shinny) and celebi.

I might have found a shiny once in Pokémon crystal (it was an Unown or something), but at that time I didn't know what a shiny is so I killed (sorry, fainted) it. Other than that only the shiny Gyarados in Gen II games.

One, a Shiny Sandshrew which I promptly evolved into a Sandslash. He's still on my physical pokemon Sapphire game right now.

Other than that, I've maybe encountered two others, but I don't remember what they were. They were also on my Sapphire game. I've never seen a shiny outside of my physical game, that's for sure.
