How do I hide my e-mail if I don't want it displayed to the world? Assuming that I cannot, how would I go about changing which e-mail my account displays?

At the top left of the page, there is a link that says "Edit Profile & Settings." Click that then scroll down to the "Online Services" section. Directly beneath your email box, you can choose to restrict your email to just logged in users or just staff. Restricting to just staff members is the best you'll get.

After you select whichever option you want, scroll to the bottom and click the "Edit Profile" button.

Let me know how this works out for you.

It is a simple fix. Go to the tab on the upper left hand of the page that says "Edit Profile & Settings". In there, you can find a section titled "Show email address publically". Just click the Just Staff bubble instead of Just Logged In Users. Do that, and only site staff can see your email.
