Well, there are a big variety of games you can enjoy... 

on NES and SNES, Mario games are ever good options... If you enjoy shooters, you should play Parodious... It's for both consoles. For the Sega Genesis, Sonic games. I also recommend you the Treasure's games... Those are hecking fun!

For Mega Drive: Decap Attack, Alien Soldier, Altered Beast, Comix Zone, Splatter House 1, 2 and 3, Golden Axe 1, 2 and 3, Revenge of the Shinobi, Shinobi 3 and also the Alex Kidd games for both Mega Drive and Master System.

As for SNES: X-Men Mutant Apocalypse, War of the gems, Maximum Carnage, Spider-man and Venon: Separation Anxiety, Alien VS Predator, Knights of The Round, TMNT: Turtles in Time, Megaman X, X-2 and X-3...

For NES I would say Ghouls'n'Ghosts (there's an improved SNES version too), Battletoads (which also has an improved Mega Drive version) and all the Ninja Gaiden games (who also, have a SNES version with some improvements). These are freaking hard though...
