I have two final bosses that I thought were both quite easy.

1. In New Super Mario Bros where you just have to hit the button to kill Bowser. I mean, of course.. you COULD kill him the normal way.. but why waste all that time and work..

2. In Super Smash Bros. Brawl, ALL of the bosses are TOO EASY. Not just the Hand, but all the SSE bosses, including Tabuu. They needed to make his attacks more effective or harder to dodge.. Yeesh. he's a final boss. Make him act like one.

i couldnt really tell from my point of veiw,but i think that the fairfax in fable 2 is easyest mainly cause you dont even really have to do anything 2 beat him!=)

Had to be the final battle in Infamous. I won't say the guy's name to avoid spoilers, but all you have to do is shoot shock missles at him while he rests, and avoid simple attacks when he's active.

I think the easiest Boss to defeate is the goldfish in " Earth Worm Jim "

...takes you like a hell of a time to get to him and then you just need to walk or shoot him out of his glas ! WOW, what a Bossfight !

Final Fantasy VII the very last battle with Sephiroth you go first and use omnislash. Even if don't do anything you beat him. It was kind of disapointing but cool to se omnislash go on for like one and a half minutes.

Um, I dunno if I posted this before, but the final boss in Evolution 2: Far Off Promise was such a joke. Seriously like, if you had the right equipment, Ulticannon died in about 3 hits.

I guess I'd have to say the last boss in the Musashi game for PS2. It wasn't even a fight, really..lol. It was just a simple QTE (push Square at the right time).
