What is the National Dish or regional one of your country/region?

Have you tried any other places national/regional dish and what did you think of it?

Whose national dish would you like to try?

In my families region Pork is taken really seriously and they make a big deal of it, mostly it is grilled on huge open coal pits and it melt in the mouth tender. Nowhere else can match, but then the pigs are mostly wild bred and apparently worth quite a bit if sold on the open market, but the locals prefer not to catch and sell them as they are so tasty. I think I will go vegetarian, poor pigs and try the national dishes of India.
