Is there a special embed code for these things or am I just failing?

Especially for the video's, it says the video can't be found... or displayed... but it gives a little youtube window. I've searched elsewhere and I can't find anything. Anyone have suggestions?

I haven't tried yet but I assume embedding pictures on my profile is the same code as in the forums, yes?

I can't double check right now but I'm pretty sure you have to use HTML for your profile, I don't think you can use BBcode. As for the video problem I can't check that out right now since I'm on a phone, but I'll check it out when I get to a comp.

You have to use HTML or CSS, you can't use BBcode or javascript. Javascript has been disabled on profiles because of security issues, so stuff like the youtube videos won't work. You should be able to make pictures work though, by using standard HTML tags.
