You probally cant edit your layout because the layout requirements changed since when you last edited it.
You need 250 posts or trusted status to edit your layout now.
So go and get 22 or so more posts and you will be able to change your layout, including getting rid of the signature text.

Well, there is one other thing you could try first, try switching to one of the pre made layouts and see if that erases what you have now.
No promises that it will work though.
