I have two personal favourites:

I like Ifirt in FF10 because he looks less like a beast, and more human, if that makes sense, plus he's the first one in FF10 that can heal himself with elemental magic.

I also like Diablos from FF8, because you can get him at almost anytime, and he has gravity magic, which really helps on bosses.

Bahamet X (or zero as some call it) i think it's awesome how he flies above the planet then shoots his ball of "blow the heck out of everything in site" at the bad guys...knights of the round would be cool if it didn't take forever for it to complete
