Any good screen capture program will do that, though it depends on whether you want to go through a bunch of picture files or a video file, as well as how long you want to run said program for per session and how much disk space you have available to store the files.

I have used IrfanView to do autoscreen captures with decent success.

Do you mean in places like password fields and such, how you normally type and the password appears like ******** but now it's showing up the actual letters?
