I wanted to let everyone know that I will be continuing this competition, so let's get some more great recipes!  However, I will be extending the deadline just because I'm busy and will only be able to buy the ingredients slowly as money permits.  I'm not sure what the deadline will be extended to, but I'll give it some thought and update the original post once I decide.  My guess is through the end of May.  If I extend the deadline that far though, I'll also increase the prize to make the wait worth it.

I just wanted to let all you vizzed users know that I HAVE cooked many more recipes on this list, and taken pictures!  I just haven't made the time to type up the results quite yet.  I should get around to it once this month is over, however.

In the meantime, is there anyone else that wants to compete for the 25,000+?  I'm pretty sure I'm going to make the prize at LEAST 75,000, so don't miss out on the opportunity!  Also, make sure you read all the rules.  

I'm going to go ahead and set a deadline on this for June 15th. Simply because I will be out of school for two weeks by then, and I can play catch up on any recipes I might not have gotten around to.

I originally made this recipe because I love the real stuff (not the dehydrated kind), but I have a slight gluten intolerance. Tamari is a gluten-free soy sauce and a konbu leaf is a sea vegetable and not completely necessary for this recipe.
Erin's (nearly) Ramen (1-2 servings)

1 1/2 Cup of water
1/4 cup of Tamari / regular Soy Sauce
1/4 of a Konbu Leaf (op) OR bullion of your choice
1 packet of Thai Kitchen Brown Rice Noodles
Garlic Salt (to taste) or 1/2 Tbsp of Garlic
1 Tbsp of Agave Nectar/ honey
1/2 a block of Extra Firm Tofu (optional)
1 cup packed Spinach (optional)

Set aside Tofu in a bowl and cover with Tamari soy sauce to marinate.

Heat water, Tamari, garlic salt and Konbu leaf in a small pot. After three minutes of hard boiling, remove the leaf. Remove pot from heat and empty rice noodles in the broth. Cover and wait five minutes. (if you want to add the spinach, add it now before you cover the noodles)

While waiting for the noodles to cook, cut tofu into bite-sized pieces.

After noodles are done, add the tofu! (check to make sure the broth is still warm, the cold spinach and tofu may make it lukewarm! If this is so, place the pot back on heat for a few minutes until desired temp has been reached)

I'm going to be doing some shopping in the next few days so that I can complete this competition.  As expected, I got way too busy to attempt any of this during the month, but I only have one day of work left!  If any of you want to submit some recipes, you best do so now, so that I can get all my shopping done at one time and spend the next two weeks cooking like crazy! Singelli : Did you ever get around to my chicken? I know in another thread a few weeks ago you said you hadn't, but since entries are no longer valid, I was just wondering if you had gotten around to my Alt Stir Fried Chicken Breasts?

Edit: It is best to have any where from 8 to 16 chicken breasts... and remember... defrost them IN THE PAN... not in cold water in the sink.

pepper (just a teensy bit)


Pour bread crumbs in bowl, then throw chicken in. Turn chicken over time to time, soak in cruimbs until fully breaded.
add as much pepper oyu like until both pieces has as as much pepper as desired
ps: Black pepper, too... not hot peppers XD


Pop them in the oven, bake until hot.
