I like listening to Jazz (most kinds) and Ambient Techno when I want to relax. Sometimes though, some Metallica will do the trick. Usually stuff that I haven't heard in a while will soothe me but, stuff like Björk, Sam Cooke, Charles Mingus, etc. always seem to work.

I personally love classical music. I didn't really enjoy it when I was younger but now that I'm a bit older I have more of an appreciation for it.
