As for me, it's Gannondorf, maybe some of you think that he's over used, but I still think that he's awesome in OOT.
The opening dream were you first see him, and when you finally meet him in person, chasing off Zelda and Impa.

very funny! I like your attitude!

His theme was very well done.
The final battle in both OOT and TP was so epic! (I haven't played Wind Waker yet although I want to.)
His script was written with epic ferver.
 
So, yeah, I like Gannondorf the most.
