I usually put cheddar cheese and Swiss cheese on mine with bacon bits and sour cream. I think baked potato's taste plane and dull so I just pack them with any type of cheese or meat I can find in my refrigerator.

There's this little place next to us which happens to be my favorite little fast food diner.  It makes the BEST loaded potatoes.  They get these gigantic potatoes and then load them with beef, barbecue sauce, chives, shredded cheddar, and sour cream. The nice thing is that the potatoes are large enough to last four meals!
