I've just recently played through Kingdom Hearts 1.5 HD remix and decided to write this little guide on how to beat the secret bosses. This guide is mostly based on my own experience and slightly to how I've seen other people fight them.

PHANTOM

With that said let's start on the first boss; Phantom. Phantom may seem difficult at first, but once you've gotten the hang of it, it is actually easier than any other secret boss on the serie I've fought so far.
Phantom looks like an empty black robe with an Heartless emblem in the back. Within the robe is a colour-changing heart, that is it's weak spot. In the final mix the robe is white with black sleeves.

How to get to the battle:

After you've closed the Final keyhole in Hollow Bastion, go to Neverland and enter the room with Tinker bell in it with Peter Pan in your Party (you won't understand what she's saying without him). Once spoken Peter Pan will ask if you want to go to the Clock Tower. By choosing yes, you enter the battle.

Preparations for battle:

Although you don't have to be very high leveled to beat Phantom (when compared to other bosses) it's a good idea to get yourself some Hp and Defense since his hits sting quite a bit.
* For all you items choose elixirs and megalixirs.
* Include Goofy in your Party with MP gift-ability equipped to him
* Have at least the following abilities on: Scan, Last stand, Leaf bracer, Second chance
* For quick select magic choose: Stop, Fire, Cure

The Battle:

The battle with Phantom is mostly magic-based. Nearly all the damage that you deal to him is made with spells (which is why you should have the elixirs). Phantom has three attacks:
Claw: A physical attack he does when he's closing on you
Dark Fireball: Shooting at you with a homing fireball
Doom: Casting a timed spell that kills the target instantly and permanently after the timer runs out. This is the move you have to be most prepared for.

Phantom begins the battle by casting Doom on Peter Pan. Counter it by flying to the clock tower and using Stop. If you don't, the timer will keep ticking and after one minute your Party member will be killed. Phantom always targets Peter Pan first, Goofy second and Sora last. After one minute of battle the counter begins again, so be always vigilant so that no one dies. After that he will most likely keep on flying around and trying to attack you with his claw. Now is your turn to attack. Phantom can only be damaged with a certain attack, at a time. The attack can be seen by looking at his heart. When the heart is
Yellow = use Thunder
Blue = use Blizzard
Red = use Fire
White = attack with a keyblade.

At some point Phantom will cast his Dark Fireball. Easiest way to dodge it, is by going to the other side of clock tower so that the fireball hits the side of the building. Just be careful not to approach Phantom before the fireball is certainly gone.
The rest of the battle is nothing but repeating this pattern. Whenever you get low on magic use elixir, and whenever you're low on HP use either cure of elixir depending on how much MP you have left. Just try to remember the Doom-counter since that's most likely the attack that will kill you.

After battle your Stop magic is upgraded and you can reach the Clock tower again freely.

KURT ZISA

Kurt Zisa is the other secret Heartless boss in Kingdom Hearts, and he is found in Agrabah. Overall he is quite difficult, but doesn't hold a candle to Sephiroth. He looks like a six handed Arab warrior, with a snake-head, holding two scimitars. His weak spot is the jewel in the snake's mouth

Getting to the battle:
After sealing the final keyhole enter Aladdin's house in Agrabah and talk to the magic carpet. He will fly you to the battle when you say Yes.

Preparations:
Your preparations should be much like with Phantom. Have at least scan, guard, dodge roll, second chance and leaf bracer included. Don't be stingy with elixirs and megalixirs. There's not many points where you need them after this battle, and if you die in battle you get them back. Include at least cure and aero in quick select

The battle:
The fight with Kurt Zisa contains 3 stages. These are
1) The physical fight: Kurt zisa uses and takes damage from Physical attacks. Magic is locked
2) Dealing damage: Kurt zisa is down and vulnerable to attack
3) The magic fight: Kurt zisa attacks and takes damage solely from magic.
The battle always begins with physical attacks. To get the heartless down you have to break the two orbs in it's hands. Kurt zisa mainly uses three moves. When he's really far away from you, he'll jump near to you. If his moderately far away he tries to close the distance with a damaging lunge. Use guard to prevent it from hitting you. When he is close he will use a wild spinning attack with his scimitars. Just get away from it with dodge roll and it will hit a maximum of one time. You may also try to guard it. That's slightly trickier but gives you a fast chance to retaliate. Overall this stage shouldn't be too difficult. Although he's hits deal a tremendous amount of damage they're quite slow so you should be able to heal yourself.
Once he's down there's not much more to do than keep on hitting him and maybe heal yourself if necessary. Kurt zisa will try to bite you but will unlikely be able to hit.
In the magic stage Kurt zisa will start floating around in a ball and using various ranged attacks. If you hit the ball, it will drop MP-bubbles. The easiest way to beat him down is by using summons. First time around use Mushu, second time Dumbo, third time (if it happens) Bambi. There most likely won't be a fourth round for him, but if it happens just use all the magic you can muster to him. When the heartless stands up after damage dealing stage try to quickly cast aero to yourself before you magic is locked again.
The second or possibly third time Kurt zisa enters the physical stage he will use a new attack. It's a spinning attack that can hit you multiple times and is really the only reason this heartless is so tough. I can't count the times this attack killed me when I first played this game as a child. There's really not much else you can do than trying to dodge him by dodge rolling or jumping over him and using elixir once he's finished. Guarding won't work so don't even try that.
If you survived his tornado attack you'll most likely beat him down in a next few turns. For a prize you gain an underwhelming amount of experience and a whole-lot-of-nothing (although in Final mix there's also a new Ansem report so that's nice.)

ICE TITAN

Ice titan is - obviously - a gigantic titan made entirely out of ice. His first appearance was in Hercules, and he is arguably the second most difficult boss in the game. His hits aren't as lethal as the heartless bosses, but are much harder to avoid and stack quickly. That's why you should have quite a lot of levels under your belt. Luckily grinding this battle over and over again is one of the best ways to gain exp. Since every time you damage him you gain 24 exp points (possibly up to 120 in the final mix).

Getting to the battle:
After you've beaten Hades cup a mysterious battle labeled ??? Appears. Choosing the battle brings you to battle with Ice titan. After you've beaten or lost to him the battle is labeled Gold match

Preparations:
If you're high leveled and competent enough you may just stick with whatever equipment you have. If you're not so certain about your skills, though you should include as much ice-nullifying equipment (Blizza/rd/ra/gun ring, Ray of light, Shiva belt etc.). Every single one of Ice titans attack is ranged and ice-based so that should decrease your damage by at least 60 %. You may also want to stack up on elixirs or if you're lacking them ethers. For your abilities include at least glide (or fast-glide if you've got that), dodge roll AND ESPECIALLY GUARD. Without the last one you won't be able to damage the titan at all. For you quick-magic put at least cure. If you use aero Ice titan will use stronger attacks that can't be deflected so don't cast that at any point. (also put on your second chance and leaf bracer if you're playing Final mix)

The battle:
I'd be tempted to just say that guard everything and leave it at that, but I'll try to be more professional.
First phase:
At the beginning of the battle Ice titan only has few attacks at his disposal. His main attack is summoning a bunch of flying ice-darts that glide towards you. When you guard these darts they fly back towards Ice titan and damage him. These darts fly at different patterns, and some are likely to hit you every time you use guard. You may try to minimize the damage by quickly dodge rolling out of the way of remaining darts that fly towards you, and only focusing on guarding single darts that are flying towards you and dodging the rest
The other attack Ice titan uses at this point is summoning a bunch of ice pillars from beneath you (much like Cerberus used to do). These pillars are fairly easy to dodge just by running around, but they do sting quite a bit and have an annoying tendency to kill you if you stop to heal yourself. That's why you should make sure to heal yourself often, even if you feel like you still have a lot of HP.
Second phase:
After you've played enough dead man's volley with Ice titan he will fall down to his knee. At that point he is suspectible to damage. You may use ragnarok if you want to, but I'd suggest that you just mash him with X-button. Also don't forget to heal
Third phase:
Ice titan rises up and goes completely insane with his attacks. He'll summon a hailstorm of ice darts that you may either guard for damage or dodge. You may fight this phase just like the first one or use a slight cheat. Go to the top of the stairs at either side of the arena and then glide to the opposite side. When ice titan is turning he will automatically shoot single ice darts that you can guard back to him. Once he gets near you just glide back to the other side from behind his back.
It's also at this point that Ice titan gets a new attack. He summons three massive ice blocks that fall to your head from above with a distinct sound. This attack does rather heavy damage, but is easy to avoid just by moving to some direction. It can easily take off your guard though se be vary. It goes without saying that you shouldn't under no circumstances heal while this attack is going on. After enough damage the titan goes back to the second phase.
Fourth phase:
Ice titan goes ballistic with his ice darts again, but this time around there are also ice blocks falling to your head. They shouldn't bother you too much though since successfully guarding an ice dart will likely also guard that one, and if you take damage from the dart you'll be immune to damage for a mere second.
You can't use the gliding trick very well at this phase, because Ice titan also summons ice block while turning. That's why I suggest that you head to some corner of the arena and stay there until he falls down. Along with his previous attacks Ice titan now also uses a frigid breath that freezes you solid and gives you nasty damage if it hits. You should dodge it by jump-gliding out of the way. While moving around be careful not to slip on ice. It won't give you damage but may make you an easy target for upcoming ice darts. Back to the second phase
Fifth phase:
At this point Ice titan probably has less than two whole bars of HP and he'll attack you with everything he's got. Along with the aforementioned attacks he may now lift his hands up and summon a blizzard towards your general area. This attack deals nasty damage that will hit you multiple times so I suggest that you stay clear out of its way. Easy way to dodge it is by going to one of the corners of the are (at the top of the stairs). When you're there the attack should just go around you, and you'll be safe if you don't wander too far away. While the blizzard is going mind the ice blocks falling from above.
For the rest of the battle Ice titan will alternate between phases 2 and 5 until he's dead. Once you beat him you gain a hefty amount of exp, an humorous cut-scene and a great sense of victory (also Diamond dust-keyblade, Ansem's report and an achievement in the final mix.

I noticed you're splitting these into parts. You can't split the same topic into different parts when you can have them all in one thread. Just put both the other parts into this one thread

Local Mods : These are the 2 other threads he's made both titled the same thing

https://www.vizzed.com/boards/thread.php?id=78625
https://www.vizzed.com/boards/thread.php?id=78111

Phantom was the only boss I actually found difficult mainly because I hated having to use specific magic. The time constraint only made the battle less enjoyable. The only reason I fought him is because the last of the dalmations were in that area and I forgot to get them beforehand. Otherwise I really didn't enjoy it. There really isn't much strategy to this other than be quick. Donald and Pan are the best party members to have in the battle in my opinion. Donald for his magic mainly and Pan is good support in this batte with his abilities. Goofy isn't too helpful in this one.

Oh, I didn't know that. I decided to include the battles as separate entries because it took a long time to write just one completely, and I didn't want to risk losing whole entries by accident (I've lost over 1000 words long posts by accidentally pressing delete at the wrong place).
I'll include the other ones and later add the guide for last battle in this post.

edit:

These two guides can now be deleted.
