I'm not a terribly talented person when it comes to building replicas of things on my own.  That said, I've spent some time building random things from different games or movies.

At one point, I started to build the city of Rapture from the Bioshock games.  I didn't get far on it before it started to become significantly different.  By the time I was don't, it was simply an underwater city with some vaguely Rapture like elements.

I built the Mos Eisly Cantina from Star Wars IV: A New Hope.  That turned out pretty good, but when I went to expand the project by building some of the surrounding city, I had a lot of difficulty and quickly lost interest.

I've built a hand full of Star Wars starfighters with mixed results.  Some of them have turned out really well, while others were ok at best.  (Built X-Wings, Y-Wings, TIE Fighters, TIE Interceptors, A-Wings, and a couple of lesser known ships.)

I think the most impressive thing I ever built was a replica of the Millennium Falcon that turned out incredibly well.

At some point, I have three other movie/game related projects that I want to do at some point.

1.  I want to make a scale replica of a Corellean Corvette from the Star Wars universe. (This would be the first of the three projects.  Depending on the results would depend on whether I moved on to the second one.)

2. The Serenity from the TV series Firefly and movie Serenity.  I expect that this will be pretty complicated, and only if this one was a major success will I consider tackling the third one.)

3. The final project I would like to someday tackle is to build an Imperial Star Destroyer from the Star Wars universe.  I expect that this would be a MAJOR undertaking, and it will require for me to find a rough blueprint of the interior (Which I have been unable to do up to this point.)  I doubt that I will ever get around to this one, but a guy has to dream right?

I wish someone else would have gotten the rights. I should look for a jetpack hack now and apply a Bobafett skin pack or Jetrooper.

I know what you mean.  I've been reading the Star Wars books since I was able to read.  And when Timothy Zahn released the Thrawn Trilogy, I was simply ecstatic!  Disney has me a little cautious on the subject, they have done so well with the Marvel movies, but I'm worried that they will either target small kids, or worse, throw out the existing lore and take the series their own direction.  I've got my fingers crossed!

As for showing off my Minecraft stuff.  I only have the xbox 360 version of the game, and I rarely play games online (Only have a Gold account for the deals of the weak and other Gold exclusives.)  If you have an xbox 360 with gold, you are welcome to send me a friends request, just let me know where I know you from when you send it.

I don't tend to save a lot of the things I build (Unless I am 100% happy with them), but I know for sure that I have a 3/4 completed fantasy themed city that is pretty impressive.  I'm also about half way done building a scale replica of neuschwanstein castle that is turning out beautifully!

If anything Minecraft helped my realized that my artistic abilities allow to me to construct mud huts......and that's about it.

NVTaks : I know that feeling well, about 90% of what I build is either pretty simple, or built with extensive use of blueprints, schematics and/or guides.  Probably the most helpful thing I have learned from the building I have done is that the easiest way to build small to middle sized buildings/ships/etc is to scale things up between 1/4 and 1/2.  (This has been especially true with starfighters and smaller starships like the Millennium Falcon)  By scaling them up a bit, it gives you a lot more room to include detail in your design and tends to be a MUCH better result visually.

When I started playing the game, it was just for a little bit of fun, and I didn't expect to ever spend a lot of time playing it.  But after a while, I decided that I wanted to build one or two "Impressive" things beyond the simple houses and constructs that I had done up to that point.  I ended up searching the Internet for "Minecraft Blueprints" or something similar and found a few simple projects that looked like fun, so I spent the next few days building several of them.  In the process of doing so, I started to get a feel for how other people build some of the incredible things that you can find online.  Since then, I mostly look up blueprints/floor-plans for different things to build (Just do a search for "Star Wars Deckplans"  or "Castle Blueprints" or something similar to find what you are looking for) then figure out about how big it is so I can start planning the project.  (I tend to plan it as two blocks in Minecraft for every 5ft on the map, but will commonly scale that up to three blocks if it will help with spacing or appearance.  The most I remember ever scaling something up is one block = one foot.)

Since I'm not great at building stuff, I don't know how much stock you should put into my advice, but those are the things that seem to help me the most, so I thought I would share.

I search using Bing, but I don't have any site specific that I hit for plans.  I know there are a lot of really great house blueprint and fantasy map sites on the Internet, but I don't have any of them bookmarked, and I rarely make use of them.

I just took a second to search both "Starship Deckplans" and "Mansion Blueprints" using both Bing and Google.  The results were pretty similar for both.  I usually just browse images until I find something I like unless I have something specific in mind.

Another place you may look for inspiration is roleplaying maps.  (From D&D or any similar game.)   Or even search something like "Roleplaying Grid Map" to bring up a few samples.  In a lot of cases, those maps will already have a grid overlay, saving a lot of time measuring or guessing dimensions for rooms, hallways, or spaces.

The only other piece of advice I can think to give is to start with something small and work your way up as you get comfortable building things.  If you start out too big/complicated on your first go, you'll likely burn yourself out pretty fast, but if you start with a modest house, then move on to something bigger like a small mansion, and keep building up, then you will be able to learn as you go without overwhelming yourself.

Yes, I did when I first started. I loved creating symbols and familiar video game objects. In fact, one of my first creations was a facsimile of Mario. It wasn't any good, of course, but I improved over time.

When I did play Minecraft, I remembered building a ton of stuff. . I didn't build too much structures that were in games or movies, but one that I remember the most was when I built a whole Hyrule Castle marketplace theme, based on Ocarina of Time. Other times I think I just created own personal creations.
