Hello vizzed, and welcome to yet another competition!  I've loved the competitions I've run in the past, but the cooking one was my all time favorite!  I had so much fun, I learned a lot, and I got some really great meals out of it!  I've decided to keep doing cooking themed competitions, and my great friend, Light Knight, helped me brainstorm some great ideas!  On top of the great ideas, David has agreed to allow me to pay out a cash prize!

How could this get any better?!  Kudos to both those guys.. they're awesome!

So what is this month's theme? Well, if you haven't guessed by the layout yet, this month's cooking competition is the healthy edition!  I gained a lot of unnecessary weight over the past few months and I want to lose it!  Besides that, I want to take care of my body in the way that the good Lord intended!  I'm on a fruits and vegetables kick!  This month, I want YOU to create some healthy dishes for me to cook and eat.

The Rules:
1.  Each submission should contain 3 parts: A smoothie or healthy juice, a salad or soup or cooked vegetable dish, and a dessert.  Remember that the aim is twofold:  Each meal must be as healthy as possible, AND fruits and veggies should be the heroes of the dishes!

2. If you design a salad, I'd really like you to give me a healthy sauce to create instead of normal salad dressing. Remember, healthy and good tasting food is the aim!

3. Please keep ingredients fairly normal and reasonably priced.  I don't have a lot of money, and I do most of my shopping at Wal-Mart.

4.  Instructions should be as detailed as possible.  I'm not a chef by any means.  I've even ruined brownies from a box.  I would like to COOK something though.

5.  Recipes have to be ORIGINAL.  What does this mean?  Don't collect a recipe off the web using Google.  Don't use a published cookbook.  I'm looking for home and family recipes.  If you want to see a few examples of what I'm looking for, try viewing the rules and submissions of my first cooking contest.

6. You will be judged on several criteria:  appearance, taste, originality, cost, and efficiency of instruction.

Deadline: July 24th, 2013
1st Prize: $25 (REAL MONEY!)
2nd Prize: 25,000 viz
3rd Prize: 10,000 viz

Personal favorite: 10,000 Viz (If my personal favorite happens to be one of the top three winners, I'll add 10,000 Viz to the amount won)

Also, everyone who provides

I have to start thinking of some recipes. I'm unfortunately not very good with desserts, so it will be tough.

One question, to make smoothies, do you have just a normal blender?

And how much NON-fruit and NON-veggies are ok on these dishes. For example, if you made a dessert, is it ok if it's in a pie crust?

For smoothies, I have both a regular blender and a really fancy juicer that does... well, all kinds of things.
And yes, pie crust is okay.  As long as the fruits and veggies are the heroes and the dishes are more healthy than not-healthy, I'll be perfectly happy!

Singelli :    Here are my healthy food challenge recipes!
 
Sunny Smoothie: Servings: 1 (avocado adds a refreshing silky smoothness)

Ingredients:
1/4 cup mango cubes, 1/4 cup mashed ripe avocado, 1/2 cup mango juice, 1/4 cup fat-free vanilla yogurt, 1 Tablespoon freshly squeezed lime juice, 1 Tablespoon sugar, 6 ice cubes.

Instructions: 1). Combine the mango, avocado, mango juice, yogurt, lime juice, sugar, and ice cubes in a blender.
2). Process until smooth and pour into a tall glass.
3). If desired, garnish with sliced mango or strawberry and serve.

Mexi-Chicken Salad: My own little twist on the real recipe. (couldn't figure out a name). Makes four servings.

Ingredients: 2 skinless, boneless chicken breast halves; 1 packet dry fajita seasoning, divided; 1 tablespoon vegetable oil, 1 can black beans, rinsed and drained; 1 can Mexican style corn, 1/2 cup salsa, 1 package mixed salad greens, 1 onion, chopped; 1 tomato, cut into wedges.

Instructions: 1). Rub chicken evenly with 1/2 of the fajita seasoning. Heat the oil in a skillet over medium heat, for 8 minutes on each side or until the juices run clear. Set aside.
2). In large saucepan, mix beans, corn, salsa, and the other 1/2 of the fajita seasoning. Heat over medium heat until warm.
3). Prepare the salad by tossing the greens, onion, and tomato. Top salad with chicken and dress with the bean and corn mixture.

Wheaty Oatmeal Cookies: Servings: 3 dozen cookies

Ingredients: 2 sticks unsalted butter, softened; 1 cup brown sugar, packed; 2 eggs, 2 cups sifted whole wheat flour, 1 teaspoon salt, 1 teaspoon baking soda, 1/2 teaspoon ground allspice, 1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg, 1/2 cup PLUS 2 tablespoons milk, 2 cups quick cooking rolled oats.

Instructions: 1). Preheat the oven to 350 degrees F. Lightly oil a baking sheet.
2). In large bowl, cream together the butter and brown sugar, then beat in the eggs one at a time, scraping down the sides of the bowl as needed.
3). In another bowl sift the flour, salt, baking soda, and spices 3 times. Add half the flower mixture to the butter mixture, then half the milk; whisking to incorporate. Repeat with the rest of the flour and the milk. Gently fold in the oats.
4). Drop the dough by rounded tablespoons onto the prepared cookie sheet, about 2 inches apart. Bake until the cookies are golden brown, but the centers are still soft, about 10 minutes. Transfer to a wire rack to cool.
