Over the years since I've been single I have really developed a love for cooking things from scratch. I've learned to cook everything from pies to cookies to roasts and hams. This past Christmas I made 2 pies,a ham,scalloped potatoes,dinner rolls,and cranberry sauce all from raw ingredients with no pre-made boxes or canned good. I also did Thanksgiving this year and made the Turkey,Mashed potatoes,turkey gravy,sweet potatoes,cranberry sauce, green bean casserole,and rolls
Tonight I'm going to cook a big pot of spaghetti from scratch but the key is cooking it down over 24 hours so the fat from the meat can cook into the pasta sauce. I'm going to buy a bunch of tomatoes and cut them up,juice some of them,and them make my own tomato paste to thicken it up. Then add all the seasoning with about a cup of red wine. I'll let that cook for about 6 hours and then it'll be time to add the garlic and Onion after I cook it with olive oil. Now its time to add the main event!
The meatballs,sausage,pepperoni,and then let the fat from the meat cook down into the sauce. The fat from the meat is the key to the flavor of the sauce. Later on I'll post some pictures to show you guys the process. I'm waiting for my brother to come over with the meat since spaghetti is a big time family meal with my family. We all get together and my brother brings the kids too.
